This Key lime cheesecake is sweet, tangy, and sure to keep you coming back for more. My favorite dessert to make has to be cheesecake and this version gets a lot of requests. I usually serve it with whipped cream and lime slices.
Ingredients
- 1.5 cups graham cracker crumbs
- 6 tablespoons butter , melted
- 24 ounces cream cheese , softened
- 1 cup white sugar
- 1 tablespoon grated lime zest
- 1 tablespoon cornstarch
- 3 large eggs
- 0.67 cups key lime juice
Instructions
-
1
Gather the ingredients.
-
2
Combine graham cracker crumbs with butter. Press into the bottom and partially up the sides of a 9-inch springform pan; refrigerate while you prepare the filling.
-
3
Preheat the oven to 300 degrees F (150 degrees C). Fill a shallow pan half full of hot water and place on the lower rack to minimize cracking.
-
4
To make the filling: Beat cream cheese, sugar, lime zest, and cornstarch in a large bowl with an electric mixer until smooth and fluffy. Beat in eggs one at a time, blending just until smooth. Add Key lime juice with mixer on low.
-
5
Finish mixing by hand. Do not overbeat, or the cake will crack during baking. Pour batter into the prepared crust.
-
6
Bake in the preheated oven for 55 to 65 minutes, or until set. Turn the oven off, and let cheesecake stand in the oven for 30 minutes with the door open at least 4 inches. Remove from oven.
-
7
Refrigerate cheesecake 8 hours to overnight, and up to 3 days.

Scallop Gratin
As far as I'm concerned, a simple gratin is the most delicious way to cook fresh scallops. The only real way to screw this recipe up would be to use the wrong scallops. And by wrong, I mean any scallops that have been soaked in a preservative brine. These are easy to identify, as they're usually sitting in a pool of milky liquid. What you want are usually sold as wild 'day-boat,' 'diver,' or 'dry-pack' scallops. They are really expensive, and worth every penny. Serve with French bread for dipping.
World's Easiest Bread Machine Pizza Dough
Borrowed from a handful of other pizza dough recipes and tweaked to yield a tasty, thick crust using a bread machine. If you use a pizza stone, sprinkle it with cornmeal before placing the pizza on it to help keep it from sticking. Feel free to try different spices if you don't like any of the ones in this recipe.
Meatless Monday Lasagna
We are always looking for recipes to add to our Meatless Monday rotation. Bumping up the protein is important for our 3 kids, so adding tofu to the cheese mixture of vegetarian lasagna works great. Use the excess tofu to make a high-protein salad dressing.
