Juicy lamb souvlaki made with marinated pieces of lamb grilled to perfection. I like to serve these skewers with tzatziki sauce and pita bread, or garlic roasted potatoes and a Greek salad.
Ingredients
- 0.33 cups olive oil
- 1.5 tablespoons freshly squeezed lemon juice
- 1.5 tablespoons red wine vinegar
- 1.5 tablespoons chopped fresh oregano
- 2 cloves garlic , minced
- 0.5 teaspoons salt
- 0.25 teaspoons ground black pepper
- 1.5 pounds boneless leg of lamb , trimmed of all fat and cut into 1-inch cubes
Instructions
-
1
Gather all ingredients.
-
2
Whisk olive oil, lemon juice, red wine vinegar, oregano, garlic, salt, and pepper together in a medium bowl.
-
3
Add cubed lamb and stir until lamb is coated with marinade. Cover and refrigerate 3 hours, or overnight.
-
4
Preheat an outdoor grill for medium-high heat and lightly oil the grate. Thread marinated lamb onto skewers, reserving any remaining marinade.
-
5
Grill skewers until desired doneness, 10 to 12 minutes, basting with the reserved marinade and turning occasionally for even cooking.
-
6
Serve and enjoy!

Short Ribs Braised with Mushrooms and Tomatoes
This short ribs recipe slowly braises short ribs with easy-to-find dried porcini mushrooms (for real, ask someone at the fancy grocery store and they'll find them for you!) until they turn into a triumph of fork-tender goodness. I love these short ribs over mashed potatoes, but the rich tomato and mushroom gravy is fantastic over soft polenta as well. I really hope you give this cool-weather wonder a try.
Black Bean Lasagna II
Lasagna with a Southwest twist. This can be frozen unbaked and kept for up to a month. Simply thaw in refrigerator overnight and bake as directed. Tastes even better reheated the second day!
Zucchini Bread, Pumpkin Style
Although I love zucchini bread, I wanted a new way to prepare it. After some thought I decided to try preparing it pumpkin bread style, since they are both in the squash family. I boiled my zucchini (skins attached) and then puréed it. It is so similar to pumpkin bread in texture and the taste...it is out of this world.
