- 1 cup white sugar
- 0.25 cups fresh lemon verbena leaves

Combine water, sugar, and lemon verbena leaves in a small saucepan. Bring to a boil, stirring until sugar dissolves. Simmer for 1 minute. Remove from the heat and let syrup steep for 30 minutes.

Pour syrup through a mesh strainer into a sterilized glass jar to remove lemon verbena leaves; let cool.

One helpful hint with the squash: It is really hard to peel so I do not peel it but instead roast it and then scoop the insides out into the soup. It's much easier that way!
