Jalapeño Cornbread Muffins
I love that these jalapeno cornbread muffins combine south-of-the-border flavors from my adopted cuisine, Tex-Mex, with my southern Kentucky roots. Cornbread is so easy to stir up, and this recipe spices it up a little, with the addition of jalapeño, onions, and a little taco seasoning mix for good measure. The recipe makes 12 muffins, but my Hubby had three!
Virgin Strawberry Daiquiri
This virgin strawberry daiquiri recipe probably makes the best drink I have ever had! It's easy to make with strawberries, sugar, lemon-lime soda, lemon juice, and ice. You can substitute red cream soda or your favorite flavor for the lemon-lime.
Tangy Rhubarb Salsa
I came up with this rhubarb salsa while trying to figure out what to do with an over-abundance of rhubarb. I'm not fond of sugary, syrupy rhubarb sauces but I love rhubarb and I love salsa, so I figured why not put them together!
