Savory and spicy, this mayo-based mackerel dip is made with canned mackerel.
Ingredients
- 1 can mackerel , 15 ounce
- 1 small onion , finely diced
- 0.25 cups tomato-based hot pepper sauce
- 2 teaspoons salt , or to taste
- 1 teaspoon ground black pepper , or to taste
- 1 cup mayonnaise

Remove and discard mackerel skin and bones. In a medium bowl, mix mackerel with onion and hot pepper sauce with a fork, breaking it into small pieces. Mix in mayonnaise, then season to taste with salt and pepper. Cover and refrigerate for 2 hours.

Refrigerator Pickles
This recipe for refrigerator pickles with celery seeds was given to me by my late mother-in-law and makes use of the abundant summertime supply of cucumbers. A neighbor recently presented me with four (5-gallon) buckets of cucumbers from his garden, and I made pickles for the whole neighborhood.
