These little frittatas are so quick and easy, and my husband and kids just gobble them up. Make them in a 24 cup mini-muffin tin. I first had these at a neighborhood breakfast, and my neighbor added fresh onions and veggies, but this is great for making on nights when there isn't much in the fridge! Honey ham is good in these, as well. They can be served hot or cold and are great as reheated leftovers.

Cheddar Biscuits
This is a very tasty, easy bread to make. It goes great with things like spaghetti and lasagna.
Burritos with Mexican Chorizo and Potatoes
Great for busy schedules! Spicy Mexican chorizo gets wrapped up burrito-style with onion, garlic, and potatoes. My family likes to top these with sour cream to offset the heat.
Slow Cooker Chicken Thighs, Green Beans, and Potatoes
This method for slow cooker chicken thighs, green beans, and potatoes will keep the chicken juicy and well-seasoned in the slow cooker. Since meat cooks more quickly than vegetables, wrap seasoned chicken thighs in foil and place on top of the vegetables.
