A family friend made these refrigerator pickles for us when we were kids. They're crisp, tangy, and simple to make — you just need a bit of patience to wait a day or two before you eat them! Wonderful on burgers, sandwiches, or as a crunchy snack.
Ingredients
- 1.33 cups white sugar
- 2 tablespoons salt
- 1 cup white vinegar
- 6 cups peeled and sliced cucumbers
- 2 cups sliced onion

Gather all ingredients.

Stir sugar, salt, and vinegar together in a clean non-reactive jar or container with a secure lid until sugar is mostly dissolved.

Add cucumbers and onion into vinegar solution; stir to coat. Cover and refrigerate for at least 1 to 2 days before serving for the best flavor, stirring occasionally. Keep any remaining pickles refrigerated.
