I made this bok choy soup with mushrooms, ginger, and garlic when my wife was sick and craving a nice flavorful brothy soup to help make her feel better. It's nourishing and delicious, and it really did the trick!
Ingredients
- 0.25 cups unsalted butter
- 1 pound white and cremini mushrooms , cut into quarters
- 1 head bok choy , chopped plus extra green leaves for garnish
- 4 greens onions , sliced
- 2 tablespoons minced garlic , or more to taste
- 8 slices fresh ginger , quartered
- 0.25 cups lime juice
- 7 cups chicken broth
- 0.5 cups chopped fresh cilantro

Gather all ingredients.

Heat butter in a stockpot over medium heat. Add mushrooms, bok choy, green onions, garlic, and ginger. Sprinkle mushroom mixture with lime juice, then cook and stir just until lightly browned, 2 to 3 minutes.

Increase the heat to medium-high. Pour in chicken broth and bring to a boil. Reduce the heat to low and simmer until vegetables are soft, about 5 minutes.

Ladle into bowls and garnish with cilantro and green bok choy leaves.

Chorizo-Spiced Party-Sized Chopped Veggie Salad
This is a large-batch hearty vegetarian salad with the bold flavors of Mexican chorizo sausage (without the meat). It's filling but low in calories. It's smoky, peppery, with bright acidity, and best of all, it has a satisfying crunch that doesn't wilt. It's great for parties since everything is chopped or diced, so it's not awkward to eat, and the crunch will last all day. You can even prepare it the night before with out worrying about a weak wilted salad.

Chicken in Lemongrass Coconut Broth
I made this soup after trying it at a Thai noodle house in my area. I just kept playing around with ingredients until I got something similar. I have the seasonings adjusted to my liking, however there is an adjustment guide in the footnotes if you would like a slightly different flavor. This soup is also good with rice or pasta, but ramen seems to be the favorite. You can use any flavor of ramen noodles.
