This easy bottom-up peach cobbler recipe was the result of letting my three baby cousins "help" me in the kitchen — the oldest was 4. Surprisingly, it turned out pretty well, if a bit messy.
Ingredients
- 0.5 cups butter
- 1 cup white sugar
- 0.75 cups self-rising flour
- 1 pinch ground nutmeg , or to taste
- 0.75 cups milk
- 1 can sliced peaches , 28 ounce
Instructions
-
1
Preheat the oven to 350 degrees F (175 degrees C).
-
2
Place butter into a 8x8-inch baking pan; place into the oven until melted.
-
3
Combine sugar, flour, and nutmeg in a large bowl; stir in milk until no lumps remain. Pour batter over melted butter in the prepared pan; do not stir. Spoon peaches over top; gently pour in juice.
-
4
Bake in the preheated oven until batter has firmed and cobbler has risen a bit, 35 to 45 minutes.

Black Bean and Corn Quesadillas
These black bean quesadillas are really cheesy, a little bit spicy, and a little bit sweet. My vegetarian husband goes crazy over them every time! Delicious with salsa and sour cream.
Bento Box Chicken Lo Mein
There is no need to order Chinese take-out when you can make this easy version at home. The best part is that it is custom to you and the vegetables you like. Leftovers re-heat nicely making this perfect for work lunch. Get creative when it comes to filling the rest of your bento box. I used mini egg rolls, seaweed chips, crunchy chow mein noodles, snow peas, and grapes.
Banana Nut Coconut Cake
The melding of banana, coconut and pecans give this cake a unique flavor. Best if made a day before serving.
