This soft-textured meatloaf is speckled with vegetables. My kids and I love the flavor of this dish. There's always enough for sandwiches the next day and crumbled into spaghetti sauce the day after that.
Ingredients
- 1 pound ground turkey
- 1 pound ground pork
- 1 tablespoon cooking oil
- 1 carrot , minced
- 0.5 reds bell pepper , minced
- ยฝ onion , minced
- 2 cloves garlic , minced
- 0.33 cups thawed frozen chopped spinach
- 0.5 cups bread crumbs
- 0.5 cups wheat germ , Optional
- 2 eggs , room temperature
- 2 tablespoons ketchup
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1 tablespoon honey
- 1 tablespoon ketchup

Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.

Set the ground turkey and ground pork out at room temperature to warm slightly.

Heat the oil in a skillet over medium heat; cook the carrot, bell pepper, onion, garlic, and spinach in the heated oil until soft; set aside to cool.

Mix together the turkey, pork, bread crumbs, wheat germ, eggs, 2 tablespoons ketchup, salt, and pepper in a large bowl. Add the vegetable mixture and continue to mix until evenly combined; shape into a loaf; lay on the prepared baking sheet.

Whisk together the honey and 1 tablespoon ketchup in a small bowl; spread over the meatloaf.

Bake in the preheated oven until no longer pink in the center, 60 to 70 minutes; remove to a serving platter and allow to rest 5 minutes before slicing.

Grandma Sony's Slow Cooker Black Beans
My mother-in-law whipped up these slow cooker black beans one day without really paying attention to what she was putting in and served them as a side. I have since had to reverse-engineer them to come up with this slow cooker recipe and found they are extremely versatile. They are excellent in burritos, over rice as a side or main dish, or just as a soup on their own. You can even add cheese to the leftovers to make a great dip for chips!
Brazilian White Rice
White rice is the main side dish made in Brazil. This is the way my mom would make it and taught my sister and I. What makes this so different is that we fry it in oil with minced onion and garlic before adding water. You can also use part water, part chicken broth. The secret is to not let it overcook because it should come out loose and not sticky.
Everything Challah
Challah is traditionally eaten on the Jewish Sabbath (Shabbos). This is not your average challah recipe. It is a twist on my trusty old water challah recipe (which even water-challah-phobics have loved), and has some of the taste of an everything bagel. It's really something else. Enjoy! This challah freezes extremely well after baking, just defrost in a ziplock bag with the zipper open. I always freeze it, even what I bake on Thursday nights for use on Friday! It preserves the freshness so well.
