In the South, grits and okra are everywhere. I threw this recipe together when trying to come up with something different. When I make it for the kids, I leave out the tomatoes and onion.
Ingredients
- 2 pounds fresh okra , sliced into 1/8-inch pieces
- 1 large tomato , diced
- 1 onion , diced
- 6 packetss instant grits
- 2 eggs , lightly beaten
- salt and black pepper to taste
- 0.5 cups oil for frying , or as needed

Combine okra, tomato, and onion in a large bowl. Add grits, eggs, salt, and pepper and mix with your hands until well blended. Shape the mixture into 2 1/2-inch-wide patties, about half as large as a hamburger.

Heat oil in a cast iron skillet over medium-high heat. Add fritters and cook until golden brown, about 5 minutes. Flip with a spatula and cook until browned on the other side, about 5 more minutes. Drain on paper towels and serve immediately.
