One-Pot Tomato Basil Pasta

Ingredients

  • 12 ounces spaghetti
  • 14 ounces diced tomatoes
  • 1 whole onion , thinly sliced
  • 4 pieces garlic , minced
  • 2 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 whole fresh basil , handful
  • to_tastes salt and pepper
  • to_tastes Parmesan cheese

Instructions

    In a large pot, combine spaghetti, tomatoes, onion, garlic, and vegetable broth. Add oregano, salt, and pepper.

    Bring to a boil and reduce to a simmer. Cook uncovered, stirring occasionally, for about 10 minutes or until the pasta is al dente.

    Stir in fresh basil and serve with optional cheese topping.
