- 20 grahams crackers , finely crushed
- 0.5 cups confectioners' sugar
- 0.25 cups butter , melted
- 1 package cream cheese , 8 ounce
- 1 container whipped topping , 8 ounce
- 1 cup confectioners' sugar
- 1 can cherry pie filling , 12 ounce

Mix graham cracker crumbs, 1/2 cup confectioners' sugar, and butter together in a bowl; press into a 9x9-inch pan.

Whisk cream cheese, whipped topping, and 1 cup confectioners' sugar together in a bowl until smooth; spread over graham cracker crust. Pour cherry pie filling over cream cheese mixture layer. Refrigerate until firm, at least 1 hour.

Stuffed Eggplant Parmesan Rolls
Had this for the first time at a take-out pizza and pasta place in southern California. We all loved it so much that we came up with our own version that is just as good as the take-out one. This has become an all-time favorite in our house. Serve with your favorite tomato sauce, cream sauce, or other topping sauce. We serve this over spaghetti noodles, then top with favorite sauce sprinkled with cheese. Or just eat as they are straight from the oven.
