This orange dreamsicle salad is citrus-forward and super light and fluffy, with bright pops of mandarin oranges throughout the fluff—a really easy and fun evergreen dessert.
Ingredients
- 1 package orange-flavored gelatin , 3 ounce
- 0.75 cups water
- 2 cans , 15 ounce
- 1 package vanilla instant pudding and pie filling , 3.4 ounce
- 1 containe frozen whipped topping , 8 ounce
- 2 cups marshmallows

Gather all ingredients.

Whisk together orange-flavored gelatin and boiling water in a large, heatproof bowl until fully dissolved.

Drain mandarin oranges and set aside at room temperature; reserve 1/2 cup of the light syrup. Whisk the 1/2 cup syrup into gelatin mixture (discard remaining syrup, or reserve for another use). Chill gelatin mixture, uncovered, until cool to the touch, about 15 minutes.

Whisk instant pudding into cooled gelatin mixture until combined. Return bowl to refrigerator and chill until slightly thickened, about 10 minutes.

Gently fold in whipped topping until just combined.

Add mandarin oranges and marshmallows, and fold until evenly distributed. Cover and chill mixture until set and slightly thickened, about 3 hours.

Serve in chilled bowls; garnish with more marshmallows.

Mrs. P's Biscotti
This was given to me by my very best friend; it's her mother's recipe, and a wonderful basic biscotti recipe. Very rarely do I make them the same way twice. You can add dried cherries, cranberries, walnuts, toasted almonds, chocolate, white chocolate or cinnamon chips, or nothing at all -- It's good enough to stand on its own. I also change the flavorings and use almond or vanilla extracts. These will keep for a couple of weeks (if you're lucky) in your cookie jar!
