Papa Tom's cheesy hash browns recipe is a modified version of Cracker Barrel restaurant's excellent brunch dish. It can be cooked the day before and reheated or frozen and reheated.
Ingredients
- 1 package frozen hash brown potatoes , 2 pound
- 1 container sour cream , 16 ounce
- 12 ounces shredded sharp Cheddar cheese
- 1 can cream of celery soup , 10.5 ounce
- 1 onion , chopped
- 0.5 cups unsalted butter , melted, divided
- 0.25 teaspoons ground white pepper
- 0.13 teaspoons cayenne pepper
- 1 cup crushed corn flakes
- 1 cup crushed cheese-flavored crackers , such as Cheez-It

Preheat the oven to 350 degrees F (175 degrees C).

Combine hash browns, sour cream, Cheddar cheese, celery soup, onion, 1/4 cup butter, white pepper, and cayenne pepper in a bowl; transfer to a 9x13-inch baking dish. Sprinkle corn flakes and cheese-flavored crackers over casserole; drizzle remaining 1/4 cup butter over top.

Bake in the preheated oven until bubbling and cooked through, about 1 hour.

Barbadian Plain Cake
This Barbadian plain cake is a simple pound cake that's good with a cup of tea. My grandmother, Gladys Payne Gittens, came here from Barbados in about 1906. She read this recipe to me over the phone when I was in law school in 1978. Thanks to my friend Elayne, the Soulful Yenta, to whom I gave a copy, I was able to find this on Mother's Day.
