This pecan chicken salad with apples and grapes can be made with rotisserie chicken, or you can make your own roasted chicken. Ingredients
- 2 cups chopped cold rotisserie or roasted chicken
- 1 Fuji apple - washed , cored, and chopped
- 1 cup red grapes , halved
- 0.5 cups chopped celery
- 0.5 cups chopped pecans
- 0.5 cups mayonnaise
- 3 tablespoons Thousand Island dressing
- 1 tablespoon minced red onion , or to taste
- 0.5 teaspoons ground ginger
- 0.25 teaspoons curry powder
- 0.25 teaspoons dry mustard
- salt and ground black pepper to taste

Combine chicken, apple, grapes, celery, and pecans in a large bowl.

Whisk mayonnaise, Thousand Island dressing, onion, ginger, curry powder, and dry mustard together in a small bowl; pour over chicken mixture. Stir to combine. Season with salt and pepper.
