A traditional German holiday cookie.
Ingredients
- 4 cups all-purpose flour
- 0.5 cups white sugar
- 1.25 teaspoons baking soda
- 1.5 teaspoons ground cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon ground nutmeg
- 0.5 teaspoons ground allspice
- 1 dash ground black pepper
- 0.75 cups molasses
- 0.5 cups butter
- 2 eggs , beaten
- 1.5 cups confectioners' sugar

In a large bowl, stir together the flour, sugar, baking soda, cinnamon, cloves, nutmeg and allspice. In a medium saucepan over medium heat, combine molasses and butter. Heat, stirring occasionally, until the butter is melted. Remove from heat and allow to cool to room temperature. When the mixture has cooled, beat in the eggs. Blend the molasses mixture into the dry ingredients until evenly mixed. Cover and refrigerate for at least 3 to 4 hours.

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. Roll dough into 1 inch balls and place them 2 inches apart onto the cookie sheets.

Bake for 12 to 14 minutes in the preheated oven, or until firm. While cookies are still warm, toss them in a bag with confectioners' sugar and toss to coat. When cool, toss with sugar again.

Cranberry-Ginger Linzer Torte Cookies
This is one of my favorite cookies for a few different reasons. It's kind of a sandy cookie, so you get that snap. Its warming spices play very nicely with the cranberry-ginger jam. You can use that jam in other places, even as cranberry sauce. You have that acidity and that little bit of sour as well as sweet. And they're just as good right out of the freezer. It's a great cookie with the holidays for exchanges or just to have after dinner. Can be stored in an airtight container at room temperature for up to 3 days.
Mojiteas
Based off my mint tea punch recipe, this is a quick and easy way to make an adult pitcher drink that is wonderful for those hot summer nights! The mint and rum make this cocktail reminiscent of a mojito, but the tea and juices give it an added twist! Add more rum to make it stronger, or reduce the kick by adding less rum and more cold water. It's a versatile, refreshing, and above all, easy drink to make. Serve over ice, and garnish each glass with orange and lemon slices and a sprig of mint. Enjoy!

This white chocolate raspberry cheesecake is excellent and just as delicious as one you would get in a restaurant. Garnish with white chocolate curls if desired. Great for special occasions!
