These pickled peppers are easy to make with a simple pickling brine. They're great for a savory snack and delicious on a sandwich.
Ingredients
- 1 cup water
- 0.5 cups distilled white vinegar
- 0.33 cups white sugar
- kosher salt to taste
- 3 reds bell peppers , halved, or more to taste

Combine water, vinegar, sugar, and salt in a saucepan; bring to a boil. Add bell peppers to boiling water mixture. Reduce heat to medium-low and simmer until peppers are softened, 8 to 10 minutes.

Transfer peppers and liquid to glass jars. Screw on the lids and refrigerate for 8 hours to overnight.
