Pickled red onions are easy to make and a great tangy topping for tacos, pizzas, salads, and lots more!
Ingredients
- 1 medium red onion , thinly sliced into half-moons
- 0.75 cups white wine vinegar
- 1 teaspoon sea salt
- 1 teaspoon white sugar
- 5 blacks peppercorns

Gather all ingredients.

Pack onion slices into a sterilized 1-pint jar.

Combine vinegar, salt, sugar, and peppercorns together in a small saucepan; bring to a boil over medium-high heat.

Carefully pour brine solution over onions to fill the jar; let stand, uncovered, for 30 minutes.

Seal the jar with a tight-fitting lid and shake well. Refrigerate until flavor develops, at least 1 hour or up to 2 weeks, before serving. Keep refrigerated.

Breaded, Fried, Softly Spiced Tofu
This tofu recipe is completely gorgeous. A former roommate introduced me to some basics with tofu, and over the past few years, I've settled on this ratio of spices and other breading ingredients. The crust on the tofu sticks is tasty and the texture is really wonderful. Serve with a relish or a dip of some sort (I love this with plain yogurt mixed with eggplant brinjal). I usually make this with a cumin-scented rice dish and a garlicky broccoli side.

This is an easy casserole made with ground beef, cabbage, garlic, and tomatoes. My kids don't even like cabbage, but they love this dish! Serve with rice for a comforting weeknight dinner. Also, the longer it stands the better it tastes!
