Spicy but sweet. This pineapple jalapeño margarita has the best of both worlds!
Ingredients
- 2 slices fresh pineapple , plus more for garnish
- 2 slicesfreshs fresh
- 2 ounces tequila
- 2 ounces
- 1 ounce lime juice
- 1 ounce orange juice
- 1 oz ice
- 1 lime wedge
- 2 tablespoons tajin seasoning , for glass

Combine pineapple and jalapeno slices in a cocktail shaker and muddle. Pour in tequila, pineapple juice, lime juice, and orange juice. Fill with ice and shake until well combined. Set aside.

Place tajin on a plate. Rub one side of glass with lime slice and roll in tajin. Strain margarita into the prepared glass and garnish with pineapple slice and jalapeno slice if desired.

Chewy Coconut Bibingka (Filipino Rice Cake)
A very coconutty and chewy rice flour dessert. Traditionally, this is baked in banana leaves, but my family prefers the crispy edges, which is why I use a sheet pan. I have been testing out several types of chewy desserts using rice flour, and this seems to be the favorite.

Chorizo-Spiced Party-Sized Chopped Veggie Salad
This is a large-batch hearty vegetarian salad with the bold flavors of Mexican chorizo sausage (without the meat). It's filling but low in calories. It's smoky, peppery, with bright acidity, and best of all, it has a satisfying crunch that doesn't wilt. It's great for parties since everything is chopped or diced, so it's not awkward to eat, and the crunch will last all day. You can even prepare it the night before with out worrying about a weak wilted salad.
