This is a typical Chilean drink served at every party in Chile (also served before lunch or dinner). This is my mother's version and although there are may be as many versions of it as there are Chileans in Chile, I think this is the best!
Ingredients
- 2 cups pisco
- 1 cup fresh lime juice
- 1 egg white
- 1.33 cups confectioners' sugar
- 2 cups crushed ice
- aromatic bitters
Instructions

Blend the pisco, lime juice, egg white, sugar, and ice in a blender until smooth, about 1 minute. Pour into fluted glasses and top each with 1 to 2 dashes of the aromatic bitters to serve.

Oatmeal Cream Pie
This recipe comes from my in-laws and it is one of a kind! The texture is great and each slice holds together nicely. Very reminiscent of pecan pie without the nuts. Serve warm with a scoop of ice cream or cold with some whipped cream on top! Warning: This pie is extremely sweet (and good that way)!
Slow Cooker Mojo Chicken
This mojo chicken made in the slow cooker with a mixture of orange juice, lemon, lime, garlic, and seasonings is tangy and full of bright citrus flavors. You can shred the chicken to use in other dishes, with a little liquid from the cooker, or you can serve the chicken breasts whole with the yummy sauce.
African Curry
This is an African (Mozambique) curry that can be done with chicken, shrimp, or crab. Goes well with tomato chutney and onion hot sauce. For shrimp or crab, use 1 pound.
