My mom used to serve this green Jell-O with carrots and cabbage every Christmas on a bed of crispy iceberg lettuce, surrounded by green and red grapes.
Ingredients
- 1 , 6 ounce
- 0.75 cups boiling water
- 0.25 teaspoons salt
- 0.75 cups cold water
- 1 cup shredded cabbage
- 0.5 cups grated carrots
- 0.5 cups chopped walnuts
- nonstick cooking spray

Dissolve gelatin mix in boiling water. Stir in salt, then stir in cold water. Chill until slightly thickened, about 30 minutes.

Spray an 8-inch mold with nonstick spray.

Fold cabbage, carrots, and nuts into thickened gelatin. Pour mixture into the prepared mold and chill until firm, 1 1/2 to 3 1/2 more hours.

When ready to unmold, set mold in a sink full of hot water for a few seconds to loosen. Remove from the sink, place a serving plate on top of the mold, and flip over to release salad.

This is one of my favorite cookies for a few different reasons. It's kind of a sandy cookie, so you get that snap. Its warming spices play very nicely with the cranberry-ginger jam. You can use that jam in other places, even as cranberry sauce. You have that acidity and that little bit of sour as well as sweet. And they're just as good right out of the freezer. It's a great cookie with the holidays for exchanges or just to have after dinner. Can be stored in an airtight container at room temperature for up to 3 days.
