I grew up eating these saucy, sweet, tangy Pittsburgh ham barbecue sandwiches loaded with paper-thin sliced chipped chopped ham sold at deli counters in Pittsburgh. Islay's is the original and still the best chopped ham if you can find it.
Ingredients
- 0.5 cups unsalted butter
- 1 small onion , finely chopped
- 2 cups ketchup
- 0.5 cups water
- 0.33 cups distilled white vinegar
- 3 tablespoons brown sugar
- 2 tablespoons Worcestershire sauce
- 2 teaspoons prepared yellow mustard
- 1.5 pounds chipped chopped ham
- 8 kaisers rolls , split
- 1 cup pickle relish , Optional
Instructions
-
1
Preheat the oven to 275 degrees F (135 degrees C).
-
2
Melt butter in a large skillet over medium-high heat. Add onion; cook and stir until translucent, about 5 minutes. Stir in ketchup, water, vinegar, brown sugar, Worcestershire sauce, and mustard; simmer about 10 minutes. Stir in ham; cook until sauce is bubbling and ham is heated through, 5 to 7 minutes.
-
3
Meanwhile, heat kaiser rolls in the preheated oven until toasted, 5 to 7 minutes.
-
4
Divide ham mixture among toasted rolls; top with pickle relish. Serve hot.

Chocolate-Orange Cupcakes with Pistachio Buttercream
Easy, fool-proof cupcakes inspired by the colors of Halloween. I wrote this recipe for a food-writing class! The olive oil in the batter makes them moist, and instant pudding mix gives the buttercream a hint of pistachio.
Red Velvet Cake I
A family favorite -- great for the Christmas holiday.
Creamy Cod and Potato Gratin
I got a Food Wish for a classic creamed cod recently (which, by the way, was one of my childhood favorites), but instead of doing the traditional version, I decided I'd try to make it a little bit fancier and refined and present basically all the same ingredients, but in an individual-sized, beautifully browned and bubbling, gratin form. Not to spoil the ending, but I was very happy with how this came out!
