This is a great plum cake recipe for those who enjoy a lighter cake. Perfect for entertaining as well as for the family.
Ingredients
- 3 large eggs
- 0.5 cups butter , softened
- 0.5 cups white sugar
- 1 teaspoon lemon zest
- 1 cup all-purpose flour
- 0.5 teaspoons baking powder
- 1.25 cups plums , pitted and quartered
Instructions
-
1
Preheat the oven to 375 degrees F (190 degrees C). Grease and flour a 9-inch tube pan.

2
Separate eggs into whites and yolks. Beat egg whites until stiff peaks form; set aside.
-
3
Beat butter and sugar together in a large bowl until light and fluffy. Beat in egg yolks and lemon zest.

Bake in preheated oven until a tester inserted in the center comes out clean, about 40 minutes. Transfer to a cooling rack and allow to cool before serving.

Bomba Calabrese (Spicy Calabrian Pepper Spread)
This amazing Calabrian pepper spread is as delicious as it is unknown. I love it on sliced fresh bread, but you can toss it with pasta, add it to a sandwich, fill an omelet, top a pizza, or serve as salsa with grilled fish, or in deviled eggs.
