Cinnamon chips and sugar cookie dough add a interesting (and easy) twist to a dessert that's great any time of year. I serve these with a dollop of Cool Whip.
Ingredients
- 0.67 packages refrigerated sugar cookie dough , 18 ounce
- 1 package cinnamon chips , 10 ounce
- 3 packages cream cheese , 8 ounce
- 0.75 cups sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 1 cup canned solid-pack pumpkin
- 3 eggs
Instructions
-
1
Preheat oven to 350 degrees F (175 degrees C).
-
2
Pat the cookie dough into a 9x13 inch baking dish to cover the bottom, and sprinkle evenly with the cinnamon chips. Bake in the preheated oven until the crust is lightly browned, 12 to 14 minutes.

Meanwhile, beat together the cream cheese, sugar, pumpkin pie spice, and vanilla until smooth with an electric mixer. Beat in the pumpkin until combined, then beat in the eggs until the mixture is smooth. Pour into the baking dish, and return to the oven. Continue baking until the center of the mixture has set, 30 to 35 minutes.

Cool the baking dish on a wire rack to room temperature, then refrigerate until cold, about 4 hours. Cut into 18 squares to serve.

Lime Fluff
A Georgia favorite! Great with everything! Make a lot for large gatherings, it disappears quickly! You can use any kind of nuts you like; adjust the amount to suit your preference.
Sweet and Savory Brisket
The sweet and savory mixture this brisket simmers in sounds weird, but it is actually very good. You can add potatoes and carrots during the last couple of hours if you want. This is a good recipe if you aren't going to be home all day to watch it.
Butternut Squash Lasagna
This butternut squash lasagna makes a satisfying vegetarian dinner any day of the week. It can take a while to put together, but it's always worth it!
