Ingredients
- 2 cups shredded sharp Cheddar cheese
- 2 cups shredded Colby cheese
- 2 jars diced pimento peppers , 4 ounce
- 0.5 jars creamy salad dressing , 16 ounce
- salt and pepper to taste

Combine Cheddar cheese, Colby cheese, pimento peppers, salt, and pepper in a medium bowl. Stir in enough salad dressing to achieve desired texture. Mix until well combined.

This is a dark, not very sweet, fig-filled cookie, basically a homemade fig newton. The crust gets a toasty flavor from whole wheat flour and walnuts, while the fig filling really lets the dark flavor of the fruit come through. These are definitely better the next day, as the cookies soften and the flavors get a chance to meld together.
