Ingredients
- 4 cups baby arugula leaves
- 1 cup alfalfa sprouts
- 0.33 medium cucumber , cubed
- 4 cherrys tomatoes , halved
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- salt and pepper to taste

Combine arugula, sprouts, cucumber, and tomatoes in a large bowl. Whisk oil and vinegar together in a small bowl; pour over salad. Toss salad until coated in dressing, then season with salt and pepper.

Pinto beans are simmered with onion, tomatoes, chili powder, cumin, and garlic in this easy one-pot recipe. I love making these beans just because they make the whole house smell so good, and the longer they simmer the better they taste. You could add 1/2 can of beer to make "borracho" beans.
