This quince jelly is an old family recipe. Quince is a fruit related to apples and pears — it has a bright flavor but is quite tart. This jelly is the perfect way to use quince fruit.
Ingredients
- 7.5 cups sugar
- 3 fluids ounces liquid pectin
- 4.5 cups water
- 3 pounds quinces , cored and chopped, peels on
- 0.25 cups lemon juice

Sterilize eight ½-pint jars in boiling water for at least 5 minutes, and have new lids ready.

Place quinces in a large pot, and pour in water. Bring to a boil, then reduce heat to low; simmer, covered, for 15 minutes. Strain off 4 cups of juice. Mix juice with sugar and lemon juice in a heavy pot, and bring to a boil over high heat, constantly stirring. Stir in pectin, and return to a boil. Boil for 1 full minute, constantly stirring. Remove from heat and skim off foam. Ladle into hot sterile jars, and process for 10 minutes in a hot water bath to seal.

Store sealed jars in a cool dark place. Refrigerate jelly after opening.

Shrimp and Orzo Salad
There are so many shapes of pasta out there. One of my favorites is orzo: rice-shaped pasta. I do not see it used as often as its more popular relatives like spaghetti, penne, linguine et al, which is a shame. I love the fact that orzo can be treated like rice and used to make tomato-based (jollof) or stir-fried dishes. It can be creamy like a risotto or made like rice and served with a stew or sauce. Here I use it to make a cold salad with shrimp and sweet cherry tomatoes. Use a lot of garden-fresh herbs to elevate this salad and feel free to add more vegetables if you want.
