Coquito
Coquito is a creamy, tropical, Puerto Rican holiday drink with tons of coconut flavor. It's made with both evaporated and condensed milk, cream of coconut, spices, rum, and — in this version — egg yolks. It is always requested at my holiday gatherings. Sometimes I hide it in the fridge to keep for myself! Serve in glass cups and sprinkle with more cinnamon if desired. Feliz Navidad!
Coconut Coconut Milk Cake
This coconut cake made with coconut milk is super moist and tasty. Growing up in Brazil, this was a favorite amongst our family and friends and even converted a few into coconut lovers. Enjoy it plain, or dress it up with your favorite glaze and toasted coconut.
Coconut Chicken Tenders
These coconut chicken tenders are nicely crisp from the coating and baking them on a rack helps to really keep them as crisp as possible. The dipping sauce adds a creamy sweet and spicy flair as well.
