These rich rhubarb cream cheese bars are easy to make. The recipe uses only 1 bowl and 7 different ingredients (most of which are regulars in any kitchen).
Ingredients
- 1.25 cups all-purpose flour , divided
- 0.5 cups butter , softened
- 1 tablespoon white sugar
- 1 cup white sugar
- 4 cups finely chopped rhubarb
- 1 package cream cheese , 8 ounce
- 0.5 cups white sugar
- 1 large egg
- 0.5 cups sour cream
- 1 tablespoon white sugar
Instructions
-
1
Preheat the oven to 425 degrees F (220 degrees C). Grease an 11x7-inch baking dish.
-
2
Mix together 1 cup flour, butter, and 1 tablespoon sugar in a large bowl until well combined; press into the bottom of the prepared baking dish.
-
3
Bake in the preheated oven until golden brown, about 10 minutes. Remove crust from the oven and set aside. Reduce oven temperature to 350 degrees F (175 degrees C).
-
4
Combine 1 cup sugar and remaining 1/4 cup flour in the same large bowl; stir in rhubarb and toss to coat. Spread rhubarb mixture over crust.
-
5
Mash together cream cheese, 1/2 cup sugar, and egg in the same large bowl until creamy and well combined; spread over rhubarb.
-
6
Bake in the oven until rhubarb is bubbling and topping is set, about 35 minutes.
-
7
Meanwhile, mix together sour cream and 1 tablespoon sugar in the same large bowl until well combined.
-
8
Spread sour cream mixture over hot dessert. Allow to cool completely before cutting into bars. Refrigerate leftovers.

Uncle Dave's Souffle Pancake
This is a recipe my brother Dave shared with the family. It's quite dramatic right from the oven. This is a cross between a pancake and a souffle. It's a blank canvas ready for your creative additions. We used 'canned apple pie filling' from this website as an accompaniment/topping. Would also be great with maple syrup or strawberries and whipped cream.
