I purchased a boneless leg of lamb roast from the store recently but had no idea how I'd cook it. After reading a few other recipes, I came up with my own marinade for the lamb before I roasted it. It was a hit! Hope you like it as much as we did.
Ingredients
- 0.67 cups extra virgin olive oil
- 0.25 cups lemon juice
- 0.25 cups lime juice
- 2 tablespoons minced garlic
- 0.5 teaspoons dried mint flakes
- 0.5 teaspoons dried oregano
- 0.5 teaspoons dried marjoram
- 0.75 teaspoons dried thyme
- 0.5 teaspoons crushed rosemary
- 0.5 teaspoons ground nutmeg
- 0.5 teaspoons ground cinnamon
- 0.5 teaspoons ground ginger
- 0.25 teaspoons ground white pepper
- 0.25 teaspoons salt
- 2.25 pounds boneless leg of lamb
- cooking spray
- 3 whites potatoes , Optional
- 3 large carrots , Optional
- 2 tablespoons vegetable oil
Instructions
-
1
Whisk olive oil, lemon juice, lime juice, garlic, mint, oregano, marjoram, thyme, rosemary, nutmeg, cinnamon, ginger, white pepper, and salt together in a bowl. Cover bowl with plastic wrap; refrigerate marinade at least 1 hour.
-
2
Pierce lamb in multiple places evenly over the lamb; place into a gallon-sized freezer bag. Pour marinade over the lamb, squeeze excess air from the bag, and seal the bag. Marinate in the refrigerator 8 hours to overnight.
-
3
Preheat oven to 325 degrees F (165 degrees C). Prepare a shallow roasting pan with cooking spray.
-
4
Remove lamb from marinade; shake to remove excess liquid. Reserve 2 tablespoons marinade; discard remainder.
-
5
Place lamb in the middle of the prepared roasting pan.
-
6
Combine potatoes and carrots in a large bowl. Pour vegetable oil and reserved marinade over the vegetables; toss to coat. Arrange vegetables around the lamb. Cover the roasting pan with aluminum foil.
-
7
Roast lamb in preheated oven until an instant-read thermometer inserted into the center reads 140 degrees F (60 degrees C), about 80 minutes. Remove foil and continue cooking until firm and meat is hot and slightly pink in the center, about 10 more minutes. Rest lamb 10 minutes before cutting to serve.

Easy Sheet Pan Fish Tacos
Flaky white fish with crusty, caramelized edges is topped with a cilantro slaw and drizzled with a smoky sour cream sauce in this simple fish taco recipe. Baking the fish on a sheet pan is a little heathier and a lot less messy than frying it, and means cleanup will be a breeze! For family dinners or casual get-togethers, set this up as a taco bar with other toppings such as pico de gallo, avocado slices, pickled red onions, crumbled cotija cheese, and black beans.
Healthier Old-Fashioned Potato Salad
This is potato salad the old-fashioned way, but it's healthier with low-fat mayonnaise, fresh seasonings, no egg yolks, and more celery!
Pineapple Baked Rice (Main Course for Chinese New Year)
Pineapple baked rice uses a pineapple skin as a bowl, stuffing it with fried rice. After you bake it for 15 minutes, the pineapple flavor will go into the rice and your whole house will be filled with pineapple aroma! This is great for kids. It has vegetables and a light, sweet taste . You may add cheese on top of the rice if you like. I personally don't like to add cheese, I want to keep the dish simple and original. I serve it as a main course for Chinese New Year.
