My family loves this roasted lemon herb chicken recipe. My husband even requests it.
Ingredients
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- 0.5 teaspoons seasoning salt
- 0.5 teaspoons mustard powder
- 0.5 teaspoons ground black pepper
- 1 , 3 pound
- 2 lemons , juiced
- 2 tablespoons olive oil
Instructions
-
1
Preheat the oven to 350 degrees F (175 degrees C).
-
2
Combine Italian seasoning, garlic powder, seasoning salt, mustard powder, and black pepper in a bowl; set aside.
-
3
Remove giblets from chicken cavity; rinse chicken thoroughly. Place chicken in a 9x13-inch baking dish. Sprinkle 1 ½ teaspoons spice mixture in chicken cavity; rub remaining spice mixture on outside of chicken.
-
4
Combine lemon juice and olive oil in a small bowl; drizzle over chicken.
-
5
Bake in the preheated oven until the juices run clear, about 1 ½ hours, basting several times with remaining lemon-oil mixture. An instant-read thermometer inserted into the thickest part of the thigh, near but not touching the bone, should read at least 165 degrees F (74 degrees C).

Carrot Oatmeal Muffins Recipe
A rich, moist carrot oatmeal muffin packed with whole wheat flour, raisins, pineapple, coconut, and a cream cheese surprise baked right in the center. Great for breakfast and kids love them. I vary the recipe depending on what I have on hand and it always works out great. Hope you enjoy!
Crisp Pickled Green Beans
These pickled green beans turn out very crisp with a wonderful dill flavor, and the red pepper flakes provide a nice punch. This recipe is from my grandmother's cookbook that she passed on to all her grandchildren. It's much better than those that call for cooking the beans first.
Orange Cumin Vinaigrette
Vibrant and fruity, this orange cumin vinaigrette recipe requires no whisking, drizzling, or machinery of any kind — just a jar with a lid. This "make and shake" method should only be used if you're going to eat your salad right away.
