I love roasted spaghetti squash topped with Parmesan cheese or served with pasta sauce instead of noodles. It's the best way to cook this delicious vegetable and super easy to prep.
Ingredients
- 1 spaghetti squash , 2 pound
- 2 tablespoons extra-virgin olive oil , or as needed
- 0.5 teaspoons salt
- 2 tablespoons grated Parmesan cheese

Preheat the oven to 425 degrees F (220 degrees C).

Brush both sides of squash with oil; sprinkle with salt and place cut-side up in a baking pan. Cover pan tightly with aluminum foil.

Roast in the preheated oven for 20 minutes. Uncover pan; continue roasting until squash is tender, about 35 minutes more. Cool slightly, about 5 minutes. Scrape squash flesh into a large bowl using a fork; toss with Parmesan cheese.
