This easy zucchini pasta bake is made with roasted zucchini and onions. It's a great way to use up your zucchini crop in the summer. The roasted vegetables are layered with marinara sauce and pasta, then topped with loads of cheese — you can't get better than that!
Ingredients
- 3 medium zucchini , sliced
- 2 medium onions , sliced
- 3 tablespoons olive oil
- salt and ground black pepper to taste
- 1 package penne pasta , 16 ounce
- 1 jar marinara sauce , 28 ounce
- 0.5 cups grated Parmesan cheese
Instructions
-
1
Preheat the oven to 400 degrees F (200 degrees C).
-
2
Toss zucchini and onions in a large bowl with olive oil until evenly coated. Spread vegetables into a large baking dish.
-
3
Roast in the preheated oven until golden, about 30 minutes. Remove from the oven and season with salt and pepper. Reduce the oven temperature to 350 degrees F (175 degrees C).
-
4
When the vegetables are almost finished roasting, bring a large pot of lightly salted water to a boil. Add pasta and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes; drain.
-
5
Lightly grease a 9x13-inch baking dish.
-
6
Heat marinara sauce in a saucepan over medium heat until hot. Spread hot sauce into the prepared baking dish. Top with cooked pasta, followed by roasted zucchini and onions. Sprinkle with Parmesan cheese.
-
7
Bake in the preheated oven until sauce is bubbly, 35 to 40 minutes. Remove from the oven and let rest for a few minutes before serving.

Roasted and Curried Butternut Squash Soup
This is my original recipe and can be either vegetarian or meat based. It also freezes well - just thaw, heat and add cream or yoghurt before serving. It's delicious and well worth the extra steps of roasting and pureeing. Enjoy!
One Pan Orecchiette Pasta
This delicious orecchiette pasta recipe only has a handful of ingredients, is very cheap to make, and most importantly, only uses one pan or pot for the entire procedure. Every year when it's time to go back to school I get inundated with requests from students to post recipes that are super-easy, cost pennies, and require a bare minimum of kitchen equipment — this is one of them!
Awesome Broccoli Marinara
This is a great quick version of an Italian traditional side dish in our family all the way from Italy. You can use fresh tomatoes and basil. However, as a mother of four, I opt for the quick method as I'm sure other parents of small ones can appreciate. The kids really love this dish too. Buon Appetito!
