Are you familiar with the summertime strawberry chicken poppyseed salad? This recipe makes it a wrap, merging the best of both worlds. Using rotisserie chicken cuts down on prep time, too.
Ingredients
- 2 tablespoons maple syrup
- 1 tablespoon olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 0.25 teaspoons poppy seeds
- 1 pinch salt
Instructions
-
1
For the dressing, add maple syrup, olive oil, red wine vinegar, mustard, poppy seeds, and salt to a jar with a tight-fitting lid. Seal jar and shake vigorously to blend.
-
2
Toss spinach, chicken, strawberries, pecans, and feta cheese together in a bowl. Drizzle 2 tablespoons dressing into salad; toss to combine.
-
3
Microwave tortillas until pliable, 10 to 20 seconds. Lay tortillas on a clean surface, and spoon an equal portion of chicken salad in the center of each tortilla.
-
4
Fold in sides of tortillas, almost to the center. Bring the bottom of the tortilla over the folded sides, tuck tightly over filling and roll until the sandwich is secured. Slice sandwich wrap in half on the diagonal, if desired. Serve with remaining salad dressing.

Hidden Veggie Meatloaf
Yummiest meatloaf I've ever tasted. It has so much flavor and stays very moist. Everyone I've served it to loves it. My kids go crazy over it and don't realize they are consuming veggies. This recipe freezes well. Whenever I take the time to do a recipe that takes time (like chopping veggies) and freezes well, I multiply the recipe, eating one for dinner that night and freezing a few more for later.
Lemon Cranberry Bread
This lemon cranberry bread is a bright, citrusy quick bread, chock full of tart, tangy dried cranberries, and finished off with a lemon-cream cheese icing. It's a tasty treat perfect for any occasion.
Skinny Cosmopolitan
This skinny cosmo recipe saves calories by relying on the aromatic oils in the citrus zest instead of the usual Triple Sec liqueur.
