Pork Empanadas
This empanada recipe makes tender pork turnovers. The filling can be used for almost anything else, such as taco filling; can be frozen, baked or unbaked. The pork and the empanada dough can be made ahead of time.
Easy Ranch Spaghetti Carbonara
Spaghetti carbonara gets a quick and easy flavor upgrade with the addition of ranch seasoning to the classic egg sauce.
Homemade Lasagna
This is my mom's special homemade lasagna recipe with a meaty, made-from-scratch tomato sauce and a deliciously cheesy filling. A more traditional homemade lasagna filling would be made with ricotta but my mom's recipe calls for a blend of small-curd cottage cheese and Parmesan. I have found none better anywhere. Serve with a leafy green salad and crusty garlic bread.
