This single-layer lemon olive oil cake is amazing when fresh, but gets even better a day or two after it's made. It's moist and tender, with a light lemon glaze. Be sure to use a good-quality olive oil for best flavor.
Easy Creamy Hummus
This is an adaptation of a recipe I found. I made adjustments to eliminate chopping and blending. It makes for an easy, tasty, creamy hummus. Garnish the top with some olive oil, ground paprika, or fresh minced basil if you like.

This honey mustard chicken and rice bake features honey-flavored, juicy and crisp chicken thighs over tender rice. Feel free to adjust mustard and lemon quantities if you don't like it too sweet.
