This recipe for sesame date rolls has a hint of spice and sesame seeds. They make a great grab-and-go snack, and they taste even better the next day!
Ingredients
- 8 ounces chopped dried dates
- hot water as needed
- 0.5 cups whole raw almonds
- 0.5 cups unsweetened shredded coconut
- 0.25 cups chopped walnuts
- 0.25 cups toasted sesame seeds , divided
- 1 tablespoon coconut oil
- 1 teaspoon vanilla extract
- 0.75 teaspoons ground cardamom
- 0.25 teaspoons ground cinnamon
- 1 pinch salt
Instructions
-
1
Place dates in a small bowl; completely cover with hot water. Soak until softened, 10 to 15 minutes. Drain; reserve soaking liquid.
-
2
Combine soaked dates, almonds, coconut, walnuts, 2 tablespoons toasted sesame seeds, coconut oil, vanilla, cardamom, cinnamon, and salt in the bowl of a large food processor; pulse several times until mixture forms a soft "dough," scraping down the sides of the bowl as needed. If mixture is too dry, add reserved soaking liquid, 1 tablespoon at a time, until desired consistency is reached.
-
3
Turn dough out onto a piece of parchment paper; roll into a 10-inch-long by 1 1/2-inch-wide log using lightly greased hands. Sprinkle remaining 2 tablespoons toasted sesame seeds evenly on all sides of dough log, pressing them in gently. Wrap log in parchment paper; refrigerate until firm, at least 1 to 2 hours.
-
4
Cut log into about sixteen 1/2-inch-thick rounds. Serve immediately or store in the refrigerator until ready to eat.

Oma's Rhubarb Cake
This rhubarb cake was always made by my Oma for her grandkids after she picked some rhubarb in her garden. Probably not good for the thighs, but Oma's cooking is always good for the taste buds!
Caesar Vinaigrette
Here's a smooth and tasty alternative to regular Caesar dressing. This Caesar vinaigrette dressing recipe has stood the test of time in my kitchen and is requested often. It tastes best on romaine tossed with spring mix lettuce. The dressing will keep up to two weeks in the refrigerator in an airtight container.
Fudge Stripe Cookies
Who doesn't like a chocolate striped cookie? These copycat fudge stripe cookies taste just like your childhood Keebler favorites - but improved with real chocolate and an all-butter cookie. They're made with a simple sugar cookie dough that is very easy to work with and roll out. I used semisweet chocolate to echo the sweeter taste of the Keebler originals, but you can of course use any chocolate you like.
