This shortcut Mexican fideos recipe is simple, quick, and delicious. It's great as a light meal or side dish. There are many ways to prepare fideos but for me, this is the quickest. When you add the chicken stock, you can add some tomato sauce and a dash of cumin for extra flavor. Add less water if you want drier pasta.
Ingredients
- 1 tablespoon canola oil
- 2 tablespoons minced onion
- 7 ounces vermicelli pasta
- 4 cups chicken stock
- 2 cubess tomato-flavored bouillon
Instructions

Heat oil in a large sauce pan over medium-high heat. Add onion; cook and stir 1 minute. Stir in vermicelli; cook until golden brown, about 3 minutes. Add stock and bouillon cubes; cover. Simmer until vermicelli is tender, 10 to 11 minutes.

Truffled French Fries
During dinner at the W. Fort Lauderdale Hotel, truffled french fries came with our meal. After asking the ingredients, I came home to make them myself. A fun, very delicious, yet high caloric treat! Be sure to buy high quality truffle oil at an Italian or specialty market. My recipe calls for red potatoes, but frozen (shoestring-size) fries do cut down on time and taste almost as good.
