This is and adaptation of a recipe my sister in law gave me. It is hearty and delicious. You can make it as spicy or as mild as you like to your taste and it doesn't take long to make. Set out hot sauce for diners to season to their own liking.
Ingredients
- 1.5 tablespoons olive oil
- 1 medium onion , chopped
- 1 green bell pepper , seeded and chopped
- 1 jalapeno pepper , Optional
- 3 cloves garlic , minced
- 2 cans Mexican-style stewed tomatoes , 14.5 ounce
- 2.33 cups chicken broth
- 1 package uncooked long grain and wild rice mix , 6 ounce
- 1 package fully cooked hot Italian sausage , 12 ounce
- 1 pound raw small shrimp , shelled and deveined

Heat oil in a large stockpot over medium-high heat. Add onion, bell pepper, and jalapeno and saute until tender, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute.

Drain liquid from tomatoes into the stockpot. Place tomatoes on a cutting board, dice, and add to the pot. Add chicken broth, rice mix, and seasoning packet, cover, and bring to a boil. Reduce heat and simmer until rice is tender, about 25 minutes.

Add sliced sausage and simmer for 5 minutes. Stir in shrimp, and cook until they are bright pink on the outside and the meat is opaque, about 3 minutes more.

Soft and Chewy Balkan Bread
Pogacha is a type of bread baked in the ashes of a fireplace, and later on in the oven. This bread is found in the cuisines of the Balkans and Turkey. I found it after searching high and low for a great bread to bake for my homemade panini. I tried maybe a dozen bread recipes over the years just to get it right. I needed a bread that was light and airy that you could press using a panini press and wouldn't get too hard to chew or too thick to eat.
Southern Apple Tuna Salad
I grew up eating a similar tuna salad, I have since adjusted it to be a little healthier than before. The apples make it fresh and delicious! Serve on bread of your choice with lettuce. Yum!
