A whole roasting chicken sprinkled with fresh lemon and paprika, then slow-baked with the lemon halves inside. This recipe is very easy. The chicken is moist and tastes great!
Ingredients
- cooking spray
- 1 whole chicken , 4 pound
- 2 tablespoons salt
- 1 lemon , halved
- 1 tablespoon paprika
- 1 cup water
Instructions
-
1
Preheat the oven to 300 degrees F (150 degrees C). Lightly grease a 9x13-inch baking dish with cooking spray.
-
2
Rub chicken with salt inside and out. Squeeze lemon juice from lemon halves over outside of chicken, then rub paprika all over. Place lemon halves inside chicken cavity, then place chicken into the prepared baking dish. Pour water over chicken to prevent drying.
-
3
Bake in the preheated oven, basting with water as needed, until no longer pink at the bone and the juices run clear, about 3 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read at least 165 degrees F (74 degrees C).

Korean Fried Chicken Sauce
This is my take on the classic Korean fried chicken sauce. I like to add lots of green onion and garlic, and not cook this quite as long. The result is a sauce with those ingredients a little more in the flavor profile's forefront. Try to find Korean chili flakes and/or paste if you can. I've used them before and the flavor is great (and obviously more authentic), but if you can't, any hot chili flakes or paste will work.
Chicken Cashew Salad
This chicken cashew salad recipe is a great summer pasta salad for barbeques and more. It has a slightly sweet, creamy dressing, and is loaded with chicken, cashews, and crunchy veggies.
Passover Iced Lemon Loaf
This delicious non-dairy Passover dessert can be made year-round, just swap out the flours. This was such a hit at my Seder that everyone swore I had cheated and used real flour!
