This coleslaw recipe is a sugar-free, vegan alternative to the picnic favorite!
Ingredients
- 1 bag coleslaw mix , 16 ounce
- 0.67 cups vegan mayonnaise , such as Follow Your Heart® Vegenaise®
- 0.5 cups granular sucrolose sweetener , such as Splenda®
- 3 tablespoons olive oil
- 1 tablespoon white vinegar
- 1 tablespoon poppy seeds
- 0.25 teaspoons salt

Place coleslaw mix in a large bowl. Combine vegan mayonnaise, sweetener, olive oil, vinegar, poppy seeds, and salt in a smaller bowl; mix until smooth. Slowly stir dressing into the coleslaw mix.

Refrigerate coleslaw for at least 2 hours before serving. Serve cold.

I don't like the sogginess that comes from the sauce but feel free to try it with the sauce, as it will still yield good results.
