Benne Wafers
I live in the South, where people refer to these sesame seed cookies as benne wafers. Toasting benne (sesame) seeds develops their flavor and gives these cookies a slightly crunchy texture. Store cooled cookies in an airtight container.
Migas Breakfast Tacos
Migas are normally cooked eggs with fried tortilla strips. I however enjoy a 'deconstructed' version. I cook my eggs with Hatch chiles and onions, stuff a tortilla with the egg mixture, and top them with fried corn tortilla strips.
Great Easy Waffles
This recipe has been handed down in my family and has become a favorite. If you have leftover waffles, they are great to freeze and then toast at a later time. I usually make a double recipe and then have plenty of leftovers for the kids to have for breakfast before school.
