Learn how to cook sous vide steak with this recipe. The meat comes out beautifully tender when cooked this way. Throw it on the grill afterward for extra flavor and color.
Ingredients
- 4 strips steaks , 10 ounce
- salt and freshly ground black pepper to taste
Instructions
-
1
Generously season steaks with salt and black pepper. Place into a large plastic bag and vacuum seal.
-
2
Place a heat-resistant pad underneath a large pot filled with water. Attach a sous vide precision cooker to the pot and set the temperature to 130 degrees F (54 degrees C). Immerse the bag with steaks into the water bath and cook for 2 hours.
-
3
Remove the bag from the water bath and take out steaks. Pat very dry with paper towels.
-
4
Preheat an outdoor grill to medium-high heat and lightly oil the grate.
-
5
Place steak on the preheated grill. Cook, turning every minute or so until well seared all over, 3 to 4 minutes total.

Springfield-Style Cashew Chicken
This is cashew chicken in the style first served in Springfield, Missouri in the 1960's. It involves deep-frying the chicken pieces in peanut oil. Serve this "Show-Me State" cashew chicken with soy sauce over a bed of fried rice if desired.
Empanada Filling
This is my grandmother's recipe for Peruvian beef empanada filling. Use homemade pie crust or, in a pinch, refrigerated pie crust to make these Peruvian turnovers. Lightly dust powdered sugar over the baked empanadas and serve with lime wedges for authentic flair.
