This Spam and eggs recipe is quick and easy. I'm on a diet that requires I eat over twice as much protein as carbohydrates, and this is hard since I Iove rice and biscuits! After days of eating tuna and eggs (not together), I came up with this recipe.
Ingredients
- 2 large eggs , beaten
- 1 container fully cooked luncheon meat , 12 ounce
- 2 ounces Cheddar cheese , grated

Heat a nonstick skillet over medium heat. Pour eggs into the skillet, then scatter luncheon meat over top. Cook and stir until eggs are nearly set, 3 to 4 minutes. Sprinkle cheese over top and stir until cheese is melted, 1 to 2 minutes.
