This spring salad with fresh strawberries and spinach is tossed with a sweet poppy seed dressing.
Ingredients
- 1 cup vegetable oil
- 0.5 cups white sugar
- 0.33 cups white wine vinegar
- 1 teaspoon salt
- 1 tablespoon poppy seeds
- 1 bunch spinach - rinsed , stems removed, and chopped
- 10 large strawberries , sliced

Blend oil, sugar, vinegar, and salt in a blender until smooth. Stir in poppy seeds.

Place spinach and strawberries into a large bowl. Pour in dressing and toss to coat.

German Apple Pancake
This German apple pancake is also known as a Dutch baby. It is a terrific baked pancake recipe for those special occasions. If you are strapped for time, you can start it the evening before and pretty much pop it in the oven. Delicious topped with powdered sugar, maple syrup, or a dollop of yogurt.
Cheddar Pecan Stuffed Mushrooms
In my husband's family, we have a tradition of making a variety of appetizers as our meal for Christmas Eve. My sister-in-law brought these one year and they have been one of our favorites ever since. I don't generally use the large stuffing mushrooms, though you can if you're serving this as a first or second course in a formal dinner. Instead I use regular button mushrooms so 15 or so people can have two or three each.
