This stir-fried, Asian-inspired, fast and easy way to prepare collard greens doesn't have the 'slimy' factor in long-cooked versions, making it a hit with my picky family!
Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic , minced
- 1 bunch collard greens - rinsed , trimmed, and chopped
- 0.5 cups vegetable broth
- 1 tablespoon soy sauce
- 0.25 teaspoons sesame oil
Instructions

Heat oil in a large pan over medium-high heat. Add garlic and saute until fragrant, about 1 minute. Add collards and toss to lightly coat with oil. Pour in broth and soy sauce. Cover, reduce heat, and steam until tender, turning every few minutes, 7 to 8 minutes total. Remove from heat, drizzle with sesame oil, and serve.

Blackberry Spinach Salad
This spinach and blackberry salad is an excellent brunch salad and very easy to throw together. It tastes great without a dressing, but some people like a bacon dressing or a nice balsamic vinegar.
Oregano Roasted Carrots
These oregano roasted carrots are a 3-ingredient side dish, ready in under half an hour. Roasting brings out the best in carrots, making them even sweeter.
Corned Beef and Cabbage Shepherd's Pie
This is a combination of my favorite corned beef and cabbage recipe, and my favorite shepherd's pie recipe. It involves a few extra steps when compared to your traditional boiled beef dinner, but the payoff at the end is well worth the extra effort. By layering the ingredients in a casserole dish, each serving has the perfect proportions of beef, cabbage, carrots, and potatoes.
