Strawberry and Spinach Salad with Honey Balsamic Vinaigrette
This strawberry spinach salad with balsamic is a great easy summer dish with many options for mixing and matching. Plus, the salad looks pretty fancy. You can throw in any summer fruit or berry with this mix. Blueberries and raspberries are a good choice, as are blackberries later in the season. The nuts are optional, but pecans or roasted almonds add a little crunch and more protein!

Chicken and Black Bean Casserole
This Mexican-inspired chicken casserole with rice and beans can be made with leftover chicken or chicken breasts. I usually make it the day after we have roast chicken. The recipe calls for baking, but the ingredients can also be added to a slow cooker and cooked on Low for 7 hours. We serve this with cheese, tortilla chips, sour cream, salsa, black olives, and guacamole.
Blackberry Upside-Down Cake
This blackberry cake is easy to make with ingredients you have on hand. Great to take to a party or picnic. Use a cake plate that is wider than the cake; the berries and juice run down the sides when it is turned upside-down. It looks gorgeous when done!
Cherry Buttercream Frosting
A delicious and tangy cherry buttercream frosting for cakes and cupcakes. This yields enough frosting to cover 18 to 20 cupcakes.
