A rather quick and easy waffle recipe, with the added goodness of fresh strawberries. Serve warm, topped with warm maple syrup, or the fruit syrup of your choice.
Ingredients
- 2.5 cups all-purpose flour
- 4 teaspoons baking powder
- 0.75 teaspoons salt
- 2 cups buttermilk
- 0.5 cups vanilla Greek-style yogurt
- 0.5 cups butter , melted
- 2 eggs , beaten
- 1.5 tablespoons white sugar
- 0.75 cups chopped strawberries , or more to taste

Preheat and grease a waffle iron according to manufacturer's instructions.

Sift flour, baking powder, and salt together in a bowl. Whisk buttermilk, yogurt, butter, eggs, and sugar together in a separate bowl; stir into flour mixture until batter is smooth. Fold strawberries into batter.

Pour about 1/3 cup batter into preheated waffle iron; cook until lightly browned, 5 to 7 minutes. Repeat with remaining batter.

I received free blueberries recently. I admit I never actually tasted a real one before. Always the boxed muffin kind. I loved them. Recently switched to whole wheat, so I wanted to try a new muffin recipe out. This is the one that not only turned out great, but filling as well. When I was eating it, I was craving eggs. Next time I will have to remember to throw in a fried egg or two on the side. I made 6 jumbo muffins.
