I love these super-moist, no-bake chocolate and oatmeal cookies! The only problem I have encountered when making this recipe is that the cookies seem to fall apart due to dryness. As the recipe directs, adding more milk and less oatmeal solves that problem.
Ingredients
- 2 cups white sugar
- 0.5 cups milk
- 0.5 cups butter
- 4 teaspoons cocoa powder
- 0.5 cups creamy peanut butter
- 2 teaspoons pure vanilla extract
- 2 cups quick-cooking oats

Combine sugar, milk, butter, and cocoa powder in a large saucepan over medium heat. Bring to a boil; cook, stirring constantly, until sugar is dissolved completely, 1 1/2 to 2 minutes. Immediately remove saucepan from the heat.

Stir peanut butter and vanilla into milk mixture until smooth. Add oats; stir to coat. Spoon oats mixture onto a sheet of parchment paper; let sit until mixture holds together, about 15 minutes.

Quick Cranberry Pumpkin Muffins
I have been making these for years. I used to make them in bread form, but having 7 children it was just easier to dole out a muffin than cut up the messy loaf. I also began giving these out as Christmas food gifts. This was requested by my 17-year-old son for our dessert we have to bring to his football banquet. My 21-year-old daughter who moved to Ogden, Utah with her husband and 2 kids wants to make these muffins for her in-laws who will be spending the Thanksgiving holidays with them.
Hanky Panky
A mixture of hamburger, mild sausage and Worcestershire sauce with processed cheese melted on top. Makes a delicious snack or quick meal. Serve it on toasted slices of your favorite bread.
